Tucked away down a narrow, cobblestoned lane in Galata, the Georges is sneaky like a speakeasy. Enter the unmarked door of the fabulously refurbished art nouveau building and, save for a stray piece luggage, there’s no sign of a hotel. Instead, there’s a restaurant serves the best coq au vin in the city, as well as butler-style service – 21 rooms looked after 21 staff members – and friendly freebies such as in-room breakfast, bottled water, Nespresso, WiFi and newspapers. Throughout, an unfussy elegance reigns, with dark parquet floors and bespoke brass fixtures and wood furnishings handcrafted by local artisans.
